Ekoué Teko presents a thesis on cowpea puree as a solution to malnutrition in Togo

Ekoué Teko, from the Grenoble Institute of Technology, has identified cowpea puree 'adowè' as a potential solution to malnutrition in Togo, where 28% of children under 5 suffer from chronic malnutrition. This research, validated by ABES/STAR, highlights the importance of utilizing local food resources to improve food security.

Malnutrition in Togo is a major public health issue, with a chronic malnutrition rate reaching 28% among young children. Cowpea puree, or 'adowè', is a promising nutritious alternative, but its production and consumption are declining. This study aims to promote this legume rich in proteins and micronutrients to combat malnutrition, particularly in rural areas.

Ekoué Teko has characterized the processing methods of cowpea and analyzed its rheological properties, essential for the acceptability of the puree. The results show that optimizing texture and consistency can improve consumption among young children, thereby increasing the nutritional impact of this local product.

The implications of this research are strategic for policymakers, highlighting the opportunity to invest in cowpea puree to meet the growing demand for child nutrition. Developing partnerships with local producers and optimizing processing methods are recommended to maximize the impact on the fight against malnutrition.
